Ingredients:
- about 6 oz of sun-dried tomatoes
- 1/2 red onion
- about 2 oz of arugula
- 1 orange
- 2 slices rye bread
- Extra virgin olive oil
- White wine vinegar
- Salt
- Optional: Feta cheese for added protein
Instructions:
- Prepare the Ingredients: Thinly slice the red onion and the orange. Cut the sun-dried tomatoes into strips.
- Assemble the Salad: Arrange the arugula on a serving plate as the base. Layer the sliced sun-dried tomatoes, red onion, and orange segments over the arugula.
- Toast the Bread: In a frying pan, drizzle a little extra virgin olive oil and toast the rye bread slices until they are golden and crispy.
- Dress the Salad: Drizzle the salad with a pinch of salt, a generous splash of extra virgin olive oil, and a dash of white wine vinegar to taste.
- Optional - Add Feta Cheese: Crumble some feta cheese over the salad if you’d like to add a boost of protein and extra flavor.
