This Mediterranean Salad recipe is quick and easy to make, tossed with a simple vinaigrette, and can easily double as a side salad or main dish.
Ingredients:
about 6 oz of sun-dried tomatoes
1/2 red onion
about 2 oz of arugula
1 orange
2 slices rye bread
Extra virgin olive oil
White wine vinegar
Salt
Optional: Feta cheese for added protein
Instructions:
Prepare the Ingredients: Thinly slice the red onion and the orange. Cut the sun-dried tomatoes into strips.
Assemble the Salad: Arrange the arugula on a serving plate as the base. Layer the sliced sun-dried tomatoes, red onion, and orange segments over the arugula.
Toast the Bread: In a frying pan, drizzle a little extra virgin olive oil and toast the rye bread slices until they are golden and crispy.
Dress the Salad: Drizzle the salad with a pinch of salt, a generous splash of extra virgin olive oil, and a dash of white wine vinegar to taste.
Optional - Add Feta Cheese: Crumble some feta cheese over the salad if you’d like to add a boost of protein and extra flavor.
