Let me introduce myself
I was born in Jaén in 2012 as a passion project between two friends, Andrés García Gallego and Alberto Molinero Reyes, who came together with the intention of creating an early harvest, single varietal, and high quality Extra Virgin Olive Oil (EVOO).I care about the environment, I am committed to authenticity, I respect tradition, I am beneficial to your health, and l LOVE art.
Harvested from a sea of olive trees
Jaén has over 66 million olive trees, making it the world leader in surface area, production, and foreign trade of EVOO. Our growers embrace tradition and technology to make some of the best olive oil in the world.
Quality
I am made from the BEST olives harvested from our own groves and those of 30 local growers. Every August Alberto visits each and every farm to choose the olives that will be used to create me. He visits them weekly until the harvest in October and works closely to improve their processes and quality each year. By harvesting early it takes 3-5 times more olives to make the oil, but produces an EVOO superior in taste, aroma and health benefits.
Care
In order to preserve the natural ecosystem of the groves it is important to let the wild grass grow along with other native plants. You can hear the birds sing in our lush farms and to protect them while they sleep, olives are always harvested during the day. During harvest my olives are collected on tarps around the trees and are left in the shade until sunset so they do not suffer damage under the hot Andalusian sun.
Control
My production takes place in four different mills that are very close to the fields where my olives were picked. It is important to extract the oil as quickly as possible in order to prevent fermentation and keep the acidity as low as possible. The extraction process is 100% natural, with no heat or chemicals added. You can think of me as the closest thing to "fresh-squeezed olive juice" out there.
Beautiful inside and out
From the shape and color of my bottle, to my beautifully illustrated label, and the delicious EVOO inside, I am a work of art. For me art has been a fundamental part of my life since I was born.
