Kale chips

The best snack! 

 

Ingredients:

  • 4 or 6 oz of kale (curly variety preferred, but dinosaur kale works too; roughly 2 cups)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 3 tablespoons nutritional yeast (or more to taste)
  • Optional: additional spices such as black pepper, garlic powder, turmeric, etc.

 

Instructions:

  1. Preheat the oven: Set your oven to about 400ºF.
  2. Prepare the kale: If the kale isn't pre-washed, rinse it thoroughly under running water. Remove the tough stems and cut the kale into pieces approximately 2x2 inches. If your kale is already washed, you can skip this step and the next.
  3. Dry the kale: Use a salad spinner to remove as much water as possible from the kale. Alternatively, you can pat it dry with a clean kitchen towel or place it between two layers of kitchen paper.
  4. Season the kale: Lay the kale out on a baking tray lined with parchment paper, ensuring it’s in a single layer for even roasting. Drizzle the olive oil over the kale, then sprinkle with salt, nutritional yeast, and any additional spices you're using. Toss the kale gently to coat it evenly with the oil and seasonings.
  5. Bake: Place the tray in the oven and bake for about 12-15 minutes. Keep a close eye on the kale as the time runs out, as baking times can vary depending on how fresh the kale is. You want the kale to be crispy and slightly browned around the edges, but not burnt.
  6. Serve: Remove the tray from the oven and let the kale chips cool for a few minutes. Enjoy immediately for the best crunch!
